Sabudana Vada (Tapioca Sago)- Less oil cooking in Appi Pan

Hi all. With two kids I am always on a look out for easy and interesting food and tiffin items so that its not time consuming and at the same time healthy, tasty and most importantly appealing to my kids.

So recently I tried my hands at making Sabudana (Tapioca Sago) vada but in an Appi Pan. There are 2 reasons why I chose Appi pan over Deep Frying.

One is the obvious reason, less oil. When you deep fry the Vada and pack for tiffins, they get very soggy after a time and a greasy to eat when in school or outside. However, in an Appi pan, not much oil is used and hence the hands don’t get messy and also the vada sits firm without getting soggy.

Reason two, Once when I was removing the Vada’s after deep frying, they just split open and went flying over my head. Post that I have completely stopped deep frying them. If the ratio of Tapioca and potatoes is not right, the Vada’s may split open and for that reason one should add Arrowroot Powder (Araarot) to avoid this. However, in Appi Pan this is not needed as they will not split open while being cooked.

So here is the simple recipe

Ingredients:

3 cups soaked Sago (soak it for atlas 3 to 4hours)

4 medium size potatoes ( boiled and peeled)

1 medium size lemon

Salt to taste

Finely chopped Garnish

Method:

Mash the potatoes, add the soaked Tapioca Sago in it, squeeze the lemon, add chopped coriander and salt to taste. Mix all the ingredients together till it becomes a fine dough. (Note: when you mix potatoes for too long with hands they can get sticky hence you should avoid it). Once the dough is ready, make small balls of it. Now take the Appi Pan, oil each pocket of it. Place the small balls in each pocket and grease it with oil on top. Cover it and let it cook. (Note: the ones in the centre get cooked quicker than the ones at the side so make sure to keep checking)

Keep turning them till all the sides get cooked properly. You can grease a bit more oil if you feel the need to. Once all the sides are brown, remove from the Appi pan and its ready to serve. Once done, serve with Green Chutney or Ketchup

For kids, I have avoided Green Chillies and Red chilli powder. However, you can add them if making for adults.

I am willing to try this recipe for a long time, but I don’t have this kind of utensil (Appam Maker) to make Appam. Will you be able to suggest any substitute for this utensil… I am willing to try this Appam.
